A Recipe for Spicy Mango Salsa


2 cups mango, diced

1 cup cherry tomatoes, diced

1 can corn

1 tablespoon butter

1/2 cup red onion, diced

1 tablespoon pickled jalapenos, diced

1/2 avocado, diced

1/4 cup red bell pepper, diced

1 clove garlic, minced

2 tablespoons cilantro leaves, chopped

2 tablespoons lime juice

Salt and pepper, to taste


  1. Stir mango, tomatoes, onion, pickled jalapenos, avocado, red bell pepper, garlic and cilantro leaves in a bowl. Add lime juice, and season with salt and pepper.

  2. In a large skillet, grill corn with butter until lightly browned. Mix with the rest of the ingredients.

  3. Let sit for 5-10 minutes for flavors to blend. Store leftovers in refrigerator.
